Theoretically, adding the soup before the water boils makes the ramen taste better. When the soup increases the salinity of the water, the boiling point also rises, allowing the noodles to be boiled at a temperature about 3-4°C higher. As a result, the noodles cook faster, and their starch structure is less broken down, resulting in better elasticity. This allows you to enjoy chewier noodles.
However, being theoretically correct does not always mean it is the right answer. One ramen company announced through its official website
It was stated that adding soup before the water boils results in more disadvantages than advantages. It is true that the boiling point rises by 3-4°C when the soup is added first. However, this alone does not make the noodles significantly chewier. In fact, there are more disadvantages. If the soup is added to boiling water first, a sudden boiling and splattering of the ramen broth, known as the 'boil-over phenomenon,' can occur.
This increases the risk of burns. The broth boils rapidly at high temperatures, causing the flavor and aroma of the soup to dissipate. Since it's not necessary to add the soup first and then boil, it is also okay to dip the noodles into boiling water and then add the soup and flakes.
Meanwhile, if you want to enhance the flavor of ramen while also taking care of your health, it is good to add onions or cabbage while boiling. ☆Onions and cabbage are vegetables rich in potassium, which helps excrete sodium from the body. Moreover, cabbage is rich in vitamins and minerals, which can supplement nutrients lacking in ramen. Onions are abundant in quercetin, which dissolves unnecessary fats and bad cholesterol in the blood. Eating them regularly can help prevent adult diseases.
There are cases where people drink cola together when eating ramen. However, for health reasons, it is recommended to drink milk. The calcium in ramen averages 144mg, which is about 20% of the daily recommended calcium intake. Continuously eating ramen with cola can increase the amount of phosphorus in the body and decrease calcium levels. This is because the phosphorus component in cola promotes the excretion of calcium from the body. Drinking cola once or twice is okay, but regularly drinking cola every time you eat ramen is not advisable. If you drink milk instead of cola, you can suppress the spiciness of the ramen while also supplementing calcium. One pack of milk (200ml) contains about 226mg of calcium.
