The ratio of saturated to unsaturated fatty acids is approximately 3:7 in chicken skin and approximately 4:6 in pork belly. Chicken skin contains 9.1g of saturated fatty acids per 100g, which is less than the same amount of pork belly (19g). However, considering that the recommended daily intake of saturated fatty acids for the average adult is less than 15g, this is by no means a small amount. Since we already consume saturated fat from various foods, there's no need to consume it through chicken skin.
Patients with cardiovascular diseases such as hyperlipidemia and stroke who need to eat less saturated fat should avoid eating chicken skin.
Remove the skin from the chicken before cooking. Instead of frying the skin separately, simply boil or stew the whole chicken to consume the saturated fat in the skin through the broth.
Meanwhile, if you're dieting, chicken breast is the best choice among chicken meats. At 106 kcal per 100g, chicken breast is lower in calories than chicken thigh, which has 106 kcal per 100g. It also contains less than 1g of fat. It's also a good source of protein, with 22.9% protein.
