Research has shown that people who consume large amounts of processed foods such as ham, sausages, and carbonated drinks are at a higher risk of developing type 2 diabetes.
Professor Oh Hana's research team from the Department of Health Policy and Management at Korea University conducted a study to investigate the impact of ultra-processed food consumption on the development of type 2 diabetes. To this end, the team carried out a prospective cohort study over an average of 15 years involving 7,438 residents aged 40 to 69 in Ansan and Anseong, Gyeonggi Province. The research team used a 103-item questionnaire to assess participants' food intake at the start of the follow-up in 2001-2002 and observed the incidence of diabetes until 2019. During this period, a total of 1,187 cases of diabetes were confirmed through health examinations.
Highly processed foods contain food additives such as sweeteners, preservatives, and colorings, and refer to foods that are heavily processed and modified.

According to the research findings, when divided into four groups based on ultra-processed food intake, the group with the highest consumption was estimated to have a 34% higher risk of developing diabetes compared to the group with the lowest intake. In particular, among ultra-processed foods, ham and sausages had the greatest impact on the development of diabetes. The research team analyzed that a 1% increase in ham and sausage consumption would increase the risk of developing diabetes by 40%. Additionally, ice cream, ramen, and carbonated drinks were factors that increased the risk of developing diabetes by 8%, 5%, and 2%, respectively.
However, the research team’s analysis indicates that higher consumption of candies and chocolates is associated with a decreased risk of developing diabetes, and further studies are needed to examine the underlying mechanisms and causal relationships.
Research author Professor Oh Hana stated, "Previous studies have shown that the consumption of ultra-processed foods is associated with an increased risk of obesity, hypertension, and dyslipidemia," and added, "Diabetes is not only a chronic disease like hypertension and dyslipidemia but can also lead to complications such as cardiovascular disease and kidney disease, so efforts to reduce the intake of ultra-processed foods are necessary in daily life."
The results of this study were recently published in the international journal 'The Journal of Nutrition'.
