Nuts, including almonds, are foods with various health benefits. They are particularly rich in compounds that support vascular health. However, caution is advised, as improper storage and spoilage can lead to carcinogenic effects.

 

◇Helps regulate blood sugar levels and slows cell aging

 

Eating a handful of almonds as a snack 30 minutes before a meal can help regulate blood sugar levels in people with high blood sugar levels. This is because almonds are rich in fiber, which slows the absorption of sugar into the bloodstream. Almonds contain approximately 12 grams of fiber per 100 grams, the highest amount among nuts. The fiber in almonds, in particular, further slows the absorption of carbohydrates and sugars, preventing rapid fluctuations in blood sugar levels.

 

Almonds are also rich in minerals, which also prevent rapid blood sugar spikes. Magnesium, an essential mineral, helps transport glucose into cells for use as energy. This helps stabilize blood sugar levels throughout the night and promotes restful sleep by properly relaxing muscles. Vitamin E, abundant in almonds, protects cells from free radicals, slowing the body's aging process.

 

Vitamin E also helps lower bad cholesterol (LDL) and raise good cholesterol (HDL), reducing the risk of cardiovascular disease. A 30g serving of almonds contains approximately 8mg of vitamin E, which is 67% of the recommended daily intake for Koreans. Since the skin of almonds is rich in vitamin E, it's recommended to eat them with the skin on.

◇Oxidized nuts produce Class 1 carcinogens.

 

Nuts, including almonds, are high in fatty acids and easily go rancid. This process can produce carcinogens, so caution is advised. Rancidity occurs when organic compounds in the oil react with oxygen, light, and heat in the air. Rancidity accelerates when nuts are exposed to direct sunlight or stored in an unsealed container.

 

During this process, a toxic substance called 'aflatoxin' is created, and the International Agency for Research on Cancer (IARC) classified aflatoxin as a group 1 carcinogen. According to a paper published in the Journal of the Korean Society of Food Hygiene and Safety, about 20 types of aflatoxin have been known to the world so far, and among them, aflatoxin B1 causes liver cancer. It can also cause bleeding necrosis, edema, and drowsiness. Aflatoxin is most likely to be created in hot and humid places with temperatures above 25 degrees Celsius and relative humidity of 60-80%.
