There are cases where eggs are scrambled with tomatoes, onions, and other ingredients. On busy mornings, it may be somewhat cumbersome, but it can be the best healthful meal. Cooking tomatoes with heat and adding oil (such as olive oil) enhances their health benefits compared to eating them raw. Although it is a well-known fact, not many people eat tomatoes cooked. Let's revisit the benefits of eggs and tomatoes (cherry tomatoes).

In Korea, they are mainly divided into regular tomatoes and cherry tomatoes. The varieties of tomatoes range from tiny ones about the size of a bean to large ones as big as a face. Sizes over 200g are used for steaks, medium-sized ones (60-200g) are for processing, and cherry tomatoes are considered mini tomatoes (30g or less). Among wild cherry tomatoes, there are varieties that are bean-sized and less than 1cm in diameter (according to the National Institute of Agricultural Sciences). The shapes also vary, including round, oval, egg-shaped, square, and bottle gourd-shaped, among others. They come in various colors, not only red but also light cream, yellow, orange, green, pink, purple, and black.

The key nutrient in tomatoes is lycopene. It is a powerful antioxidant that helps regulate LDL cholesterol in the blood, preventing hyperlipidemia (dyslipidemia) and cardiovascular diseases. It also prevents various cancers (such as prostate, lung, and breast cancer) by preventing cell oxidation. Additionally, it has a delaying effect on aging.

 

The lycopene component becomes more active and is better absorbed by the body as it is heated. It is better to cook tomatoes rather than eat them raw. Since lycopene is fat-soluble (dissolves in oil), adding olive oil or similar fats enhances absorption. The lycopene content varies by tomato color, with yellow < red < dark red in order of increasing amount.

It helps restore vision as a component of the retina.

Eggs contain not only protein but also lutein and zeaxanthin, which can produce a synergistic effect when eaten with tomatoes. Eggs are also rich in choline, which is beneficial for maintaining cognitive function.

Tomatoes contain a balanced amount of vitamins A, B1, B2, niacin, folate, and vitamin C. They are low in calories (14 kcal per 100g for tomatoes, 16 kcal for cherry tomatoes), and their dietary fiber (pectin) induces a feeling of fullness, aiding in weight control. Rich in organic acids that produce a sour taste, they promote gastric acid secretion, assist digestion, and reduce the body's acidity caused by meat consumption. They also contain a high amount of glutamic acid, which neutralizes greasy or bitter flavors and harmonizes with other tastes, making them useful as a natural seasoning.

      내일은 수업 있어서 추석 연휴  끝나고
      시도해봐야겠어요.
