A study found that eating foods with a firm or crunchy texture helped people lose weight more than eating soft foods. For those who like bread and want to lose weight, you can eat less when you eat baguette than when you eat castella.
A research team led by Professor Ciarán Forde of the Department of Sensory Sciences and Feeding Behavior at Wageningen University in the Netherlands conducted a study to confirm that calorie intake can be reduced through the way one eats.
The research team divided 50 experimental participants into four groups and provided them with lunch: ▲ ultra-processed foods with a firm texture, ▲ ultra-processed foods with a soft texture, ▲ minimally processed foods with a firm texture between meals, and ▲ minimally processed foods with a soft texture. All groups had the same calories and were rated as having similar tastes. The research team then checked how much the participants ate for lunch through video review. For dinner, the participants were free to eat and report how much they ate.
Analysis results, The group that ate foods with a hard texture consumed 26% fewer calories than the group that ate foods with a soft texture, regardless of how processed they were. The research team said, "Hard foods require smaller bites and longer chewing than soft foods, so eating speed is bound to be slower."
"If you eat slowly, you feel fuller and can eat less," he said. In fact, the group that ate solid foods was found to eat about 50% slower than the group that ate soft foods. When comparing how much they ate for dinner afterwards, all groups consumed similar amounts.
The research team said, "We found that eating solid foods reduces energy intake, and this reduction in intake continues until the next meal."
Examples of solid foods suggested by the research team include rice instead of mashed potatoes, salads with crunchy ingredients instead of coleslaw, chewy chicken breast instead of fish fillet, firm apple instead of soft mango, and chunky tomato salsa instead of tartar sauce.
Professor Ford said, "Crispy, hard, and chewy foods that encourage people to eat slowly help them consume fewer calories. “We have been gathering evidence for over 10 years,” he said. “Correcting the way you eat has the advantage of allowing you to continue to enjoy the foods you like while reducing the risk of overconsumption.” He continued, “Continuing to reduce calorie intake through changes in texture will also help reduce daily energy intake.”
A previous study by the research team also found that people could eat carrots about three times more slowly if they cut them into larger, thicker pieces and did not spread mayonnaise on them.
Meanwhile, the results of this study were recently published in the American Journal of Clinical Nutrition.
