I eat soybean paste stew rich in fiber and low in calories.

I enjoy eating tofu-based dishes when dieting, and on rainy days like today when I crave something spicy and meaty, I eat soybean paste stew. It's better to grind the soybeans myself, but when it's inconvenient, I can get free soybean pulp at a store that sells handmade tofu. (Portion and freeze it.) I eat meat, kimchi, and vegetables, and with the fiber-rich, low-calorie soybean pulp, I can have a complete meal in no time.
- 1. Finely chop the onions and zucchini, and tear the oyster mushrooms (other vegetables in the refrigerator can also be used).
- 2. Pork front leg meat and aged kimchi, roughly chopped (finely chopped reduces the chewy texture)
- 3. Marinate the meat in garlic and soy sauce, then stir-fry it in a pot.
- 4. Once the redness disappears, stir-fry kimchi, onions, zucchini, and mushrooms in order.
- 5. Add water and bring to a boil, then add the beef tripe and cook for about 5 minutes (it's also good to add a few spoonfuls of kimchi broth).
- 6. If it's bland, adjust the seasoning with soy sauce or salt.
- 7. Add peppers (add red chili peppers if available)
