# Ingredients
2 tomatoes + 2 eggs + salt + pepper + cheese + oil

2. Stir-fry the tomatoes
First, wash the tomatoes thoroughly and then cut them into cubes. You can use large tomatoes like I do, or cherry tomatoes.
Next, drizzle about 2 tablespoons of avocado oil onto the pan. For a low-carb, high-fat diet, it is recommended to use oils such as avocado, olive, ghee, or butter.
Add all the chopped tomatoes to the heated pan. Cook just until the tomatoes become slightly soft.

3. Make scrambled eggs and mix them together
Next, crack the eggs for the tomato and egg stir-fry and mix them well.
Push the fully ripe tomatoes to one side of the pan, then pour all the egg mixture underneath.
