First, peel the potatoes. I used small ones, which was a bit tricky, but larger potatoes are better because they are easier to shred. Next, shred the potatoes. Some recommend soaking the shredded potatoes in water to remove excess starch, but I just did it without soaking. You want to keep the process minimal to make a tasty dish. Then, add a little starch and pancake flour to the shredded potatoes and mix to form a batter. Just enough to make the ingredients stick together. After that, heat oil in a frying pan and fry the batter thinly. Making it as thin as possible is important. When one side is cooked to a golden brown, flip it over and place cheese on top. If using frozen cheese, it's better to melt it beforehand. When the other side is cooked, the cheese should be melted just right, creating a delicious, gooey layer. Now, it's ready to eat.
