Among foods, carbohydrate-rich foods like white rice and potatoes are prone to digestive symptoms. This is because reheating cold carbohydrate foods changes their chemical structure, increasing the amount of resistant starch.

 

Resistant starch is a type of starch that resists digestive enzymes, is not absorbed in the small intestine, and is instead broken down by bacteria in the large intestine. Because it's a poorly digested carbohydrate, food remains in the intestines and ferments, which can lead to gas and abdominal pain. Those with digestive conditions, including irritable bowel syndrome, should exercise caution when consuming resistant starch, as it can worsen symptoms like abdominal pain, constipation, and diarrhea.

The Food Standards Agency (FSA), the UK's food safety regulator, recommends the following tips for safely reheating leftovers. To safely reheat carbohydrate-rich foods, you must first take care when storing them. Refrigerate them for at least two hours after cooking. When reheating food, cook it hot enough to ensure even cooking throughout to avoid the risk of food poisoning. Stir the food occasionally to ensure even cooking, and maintain the proper time and temperature. Most bacteria that cause food poisoning, such as salmonella and campylobacter, cannot thrive in cold temperatures, so reheating food to at least 63°C (143°F) is recommended.

 

Meanwhile, avoid reheating leftover food more than twice. Reheating food multiple times can cause resistant starch to become more difficult to digest, which can lead to indigestion or gas, and increase the risk of bacteria remaining in the food reproducing. Reheat leftovers only once. If the amount of food is large and requires multiple servings, it's best to reheat only the amount needed before reheating, and refrigerate any leftovers.
