Why are potatoes so delicious?

I tried making potato strips pancake~🤤🤤
It's really crispy, why is it like this?

Sriracha sauce because there is no ketchup
I licked it~~ It’s delicious without being greasy.

Slice 3 potatoes into thin strips and soak in water for about 5 minutes.
Soak it and then squeeze out the excess water.
Season with salt and pepper, then add 4 tablespoons of starch powder.
Just put it in, mix it, and serve it!!
