Every winter, I feel heavy and drained. So, this time, I decided to create a vegetarian-focused meal plan. You might think eating only vegetables would be boring, but surprisingly, if you combine them well, you can enjoy a much more satisfying and filling meal.

The meal I made was a warm soybean paste stew with bellflower roots, bracken, bean sprouts, zucchini, spinach, carrots, burdock, dried squid, and even tteokgalbi (short ribs). I especially crave warm food in the winter, and this recipe was able to create a cozy and delicious meal using vegetables. The pumpkin was sweet and filling, and the tteokgalbi was also a good source of protein, so it felt balanced.

I also used a variety of vegetables, so it feels much lighter and healthier. I added a little spicy gochujang seasoning, and instead added sesame seeds, which brought out the savory flavor, and I thought, 'Ah, this is a really clever combination.'

Ultimately, I realized that a winter bibimbap meal isn't just about being healthy; it can also enhance the flavor and atmosphere. Making it yourself is even more satisfying, and sharing it with family members is also a great experience. If you're considering a winter vegetarian meal, I recommend giving this healthy, plant-based combination a try.
