Carotenoids are rich in red, orange, and yellow fruits and vegetables. When consumed through food, they are converted into vitamin A in the body, but excessive intake can lead to some of it remaining and accumulating.
Beta-carotene accumulated in the body can be secreted through facial sebum or sweat from the hands and soles of the feet.
When this pigment is expelled outside the skin like this, it attaches to the stratum corneum, making the skin appear yellow. The palms and soles have a thicker stratum corneum than other parts of the body, so they tend to show more yellowing due to residual beta-carotene. The same phenomenon can occur when consuming large amounts of carrots, pumpkins, or other similar foods, besides tangerines.
