Shiitake mushrooms, a nutritious food with useful parts
The eritadenine found in shiitake mushrooms promotes pancreatic insulin secretion, helping to improve blood sugar levels. Eritadenine is most abundant in the base of the shiitake mushroom, so it's best to include the stems when cooking. Consuming just two or three mushrooms a day can meet your daily vitamin D needs. Vitamin D is essential for bone health in diabetics, who often experience bone loss due to high blood sugar levels.
Add nutty flavor with whole wheat flour

Ingredients & Recipe (for 2 servings)
tofu 1 pack (300g), Shiitake mushrooms 4, onion 1/4, carrot 30g, squash 1/4, green onion 50g, minced garlic 1 teaspoon, salt 1 teaspoon, egg 1 piece, whole wheat flour a little, glutinous rice flour a little, olive oil a little
1 . Mash the tofu.
2 . Finely chop the shiitake mushrooms, onions, carrots, zucchini, and green onions.
3 Add one egg to the tofu and sliced vegetables and mix well.
4 . If the dough is sticky, add a little whole wheat flour and glutinous rice flour to make it thick.
5 . Add a little salt to taste.
6 . After flattening it into the shape of tteokgalbi, fry it in a frying pan that has been oiled and wiped clean until golden brown.
