The best method for VOCs was measured at 20 ppb (parts per billion) using an air fryer. Next was boiling at 30 ppb, stir-frying at 110 ppb, deep-frying at 230 ppb, and pan-frying at 260 ppb.
In particular, these figures did not disappear after reaching their peak. The pollutant levels remained quite high in the kitchen for over an hour after cooking food. The study's lead author, Professor Christian Frank, stated, "Switching from pan-frying and stir-frying to an air fryer significantly reduces indoor air pollutant exposure."
One of the factors that reduces contamination in an air fryer is its design. Dr. Delphine Palmer, an assistant professor of chemistry at Colorado State University, explained, "Since air fryers are generally sealed systems, heating oil produces particles, but most of these particles seem to accumulate inside the air fryer before escaping into the air." She added, "In contrast, frying, stirring, and deep-frying all involve oil pools exposed to the air, which release more particles."
