Tofu, a protein-rich ingredient. We'll answer some common questions about tofu, including what kind of tofu is fresh and how to store leftover tofu.

 

First, tofu should have a smooth surface and unbroken edges. The brine used to soak the tofu should also be cool and clean to indicate fresh tofu. Avoid purchasing brine that is cloudy, foamy, or cloudy when shaken.

If the tofu is fresh, simply rinsing it in water a few times will easily remove its characteristic fishy smell. If it's been a few days since you bought it and opened it, boiling it in salted water will remove the smell. If it smells fishy, ​​it's spoiled and should be discarded.

To keep leftover tofu fresh for a long time, store it in an airtight container, fill it with clean tap water, sprinkle some salt on it, and cover it. If you don't plan to eat it for a long time, mash the remaining tofu, squeeze out as much moisture as possible, wrap it in plastic wrap, and store it in the freezer. Frozen tofu can be thawed at room temperature and used for stuffing dumplings or seasoning vegetables.

Meanwhile, fried tofu and stew tofu have different moisture contents. Fried tofu is primarily used in stir-fries, stews, and fried dishes, and has a firm, firm texture that resists crumbling. Stew tofu has a softer texture and crumbles easily. Because it cooks quickly, add it just before the stew or hotpot is almost done, and simmer briefly.
