☔️🥔 Sumi Potato and Egg Pancake

I boiled some sweet potatoes and used the last remaining ones to make an egg pancake.

Since the potatoes were already cooked, frying them was easy.

I seasoned with salt and pepper, and instead of flour, I added two eggs.

I was going to blend the potatoes in the mixer, but I just chopped them up and added them.

It seems like it would have a good chewy texture.
