Eggs are one of the easiest foods to consume for protein intake. They are also rich in nutrients like choline, which is good for brain health.

One large egg contains 186 mg of dietary cholesterol, which was suspected for a while to raise blood cholesterol levels, but it has been scientifically proven that it does not increase the risk of heart disease.

However, the recipe must be carefully considered.

"When cholesterol becomes excessive, a compound called oxysterol can be produced. Some studies have shown that oxysterol has negative effects on health, such as increasing the risk of heart disease and cancer," said Angel Luk, a certified Canadian dietitian, recently to the health information media Health Digest.

Using plenty of oil in the pan and frying method can be unhealthy.

According to research, the risk of oxysterol release is highest when eggs are cooked at temperatures above 177°C for an extended period.

Oxysteryl is found in foods rich in cholesterol, such as raw meat, and its levels increase when these foods are cooked at high temperatures, stored, or reheated.

This compound can bind to LDL cholesterol, commonly known as "bad" cholesterol, and cause inflammation and plaque buildup in the arteries. While it does not directly cause atherosclerosis, it can worsen existing conditions.

Last month, a study published in the international journal Cancer Prevention Research reported that high oxysterol levels increase the risk of colon cancer by 22%.

That doesn't mean I can give up on eggs.

Eggs are called a "complete food" because they contain a balanced amount of protein, unsaturated fatty acids, essential vitamins, and minerals.

To reduce the risk of Oxysterol, Angel Look recommended cooking methods such as scrambled eggs and omelets that can be prepared at low temperatures.

She recommended minimizing oil and using oils with high heat stability to make vegetable omelets. This way, the egg proteins are more easily digestible, and the vegetables provide additional fiber and antioxidant compounds. She also advised that using avocado oil, which is rich in monounsaturated fats and helps lower cholesterol and reduce the risk of heart disease, is safe.
