What you eat is important for a healthy life, but how you prepare it is also crucial. Cooking food at high temperatures for a long time can produce toxins called AGEs (Advanced Glycation End products). AGEs are also known as 'sugar toxins,' and they are formed when sugars and proteins in food undergo chemical reactions due to heat.

Consuming age-related substances increases reactive oxygen species and inflammation, raising the risk of diabetes and cardiovascular diseases, and also accelerates aging. We explore foods high in age-related substances and possible solutions.

 

◇Food that is evenly browned and well-cooked, even if delicious, contains 'toxins'. Foods that are well-browned and cooked at high temperatures tend to have higher levels of toxins. The food with the highest toxin content is pan-fried steak, containing a total of 9052 kU of toxins. Other foods with high toxin levels include fried chicken (8965 kU), hamburger patties (4876 kU), and franchise-style French fries (1522 kU).

According to a survey in New York City, healthy adults consume approximately 14,700 kU of AEG per day. People who frequently consume fried meats, processed foods, and similar items are estimated to have a daily AEG intake exceeding 20,000 kU. Conversely, those who primarily follow a vegetarian diet and prepare meat with moisture-preserving methods have their AEG intake reduced by half. There is no established recommended daily intake for AEG. However, animal experiments have shown that reducing AEG intake by half can lead to increased lifespan.

 

◇Instead of frying or baking, if you want to consider health, it is better to reduce age intake. Avoid cooking methods such as frying or baking that involve high temperatures without moisture. It is recommended to cook with methods that involve moisture at low temperatures, such as blanching or boiling. Choose omelets and boiled eggs over crispy fried eggs cooked in oil.

Meanwhile, the 'low-carb, high-fat, high-protein' diet requires consuming a large amount of calories, so caution is needed when attempting it over a long period.
