Kimchi stew cooked in an aluminum pot releases a particularly high amount of aluminum. In 2017, the Gyeonggi Province Institute of Health and Environment conducted a study on the aluminum content in 56 commercially available aluminum pots, measuring the amount of aluminum released during cooking various foods such as kimchi stew, pickles, kimchi ramen, soybean paste stew, and seolleongtang. The highest aluminum detection was found in kimchi stew, at 9.86 mg/kg. The research team stated that higher acidity and salinity levels increased aluminum leaching. Considering the permissible aluminum levels for food use set by the Codex Alimentarius (200-520 mg/kg), the levels are not considered harmful. However, to prevent gradual accumulation in the body over long periods, it is advisable not to cook foods with high salinity and acidity, like kimchi stew, in aluminum pots. Aluminum not absorbed into the body is excreted through the kidneys, so individuals with poor kidney health should be especially cautious.
