Eggs, an essential part of breakfast... protein supplement, contributes to eye protection

According to the National Standard Food Composition Table, two eggs (100-120g) contain 13.49g of protein. This is a substantial amount even when compared to 100g of chicken breast, a symbol of high protein content, which contains 22.97g of protein. The protein content in 100g of beef is 15.61g. Eating eggs in the morning and meat, fish, or soy products like tofu for lunch or dinner can eliminate worries about protein intake throughout the day. Eggs contain lutein and zeaxanthin, which protect the retina of the eyes, and choline, which aids cognitive function in the brain.

In 2022, there were cases of death due to Salmonella food poisoning from eating egg omelets and similar dishes. Extra caution is needed when making kimbap or noodles that use egg omelets. According to the Korea Disease Control and Prevention Agency, Salmonella bacteria can be present not only in chickens, pigs, and cattle, but also in wild animals and pets such as dogs and cats.

People can become infected after contact with animals infected with Salmonella bacteria or the surrounding environment, and can transmit the infection to others. It can also be spread through contaminated water such as underground water or food. After an incubation period of 6 to 72 hours (mostly 12 to 36 hours), symptoms such as fever, headache, nausea, vomiting, abdominal pain, and diarrhea appear, lasting for several days to a week.

To prevent food poisoning, special care should be taken to avoid touching eggshells or handling other foods with hands that have egg water on them. Personal hygiene, such as hand washing, is also important. In restaurants, hygienic gloves used for rolling kimbap should be changed within a maximum of 2 hours. At home, it is safer to fully cook eggs rather than eating soft-boiled eggs. According to the Korea Food & Drug Administration, to eat eggs without worrying about food poisoning such as salmonella, it is better to thoroughly heat them (core temperature of 75°C for at least 1 minute) rather than consuming soft-boiled eggs.

How long can a person infected with Salmonella food poisoning transmit the infection?

Salmonella food poisoning can affect anyone, but infants and young children are more susceptible. The contagious period can range from a few days to several months. People who have received antibiotic treatment or infants tend to be contagious for a longer period than others. It is advisable to test and manage Salmonella infections in livestock and pets. Chicks and turtles are especially dangerous to young children. Care should also be taken to prevent contamination of animal feed.
