The fatty acids in sesame oil belong to the omega-6 series.

 

Linoleic acid accounts for 40%, and oleic acid from the omega-9 series accounts for 40%.

 

It contains a large amount of unsaturated fatty acids, which prevent the formation of cholesterol and triglycerides in the blood.

 

Sesame oil is also rich in antioxidants called lignans.

 

Lignans prevent cancer, atherosclerosis, and stroke.

 

Helps reduce risks.

 

 

 

It also has the effect of preventing aging and improving cognitive function.

 

However, sesame oil has a relatively low smoke point of around 170°C. Exceeding this temperature can cause chemical reactions that produce harmful substances in the body.

 

 

 

Therefore, sesame oil is best used in non-heated dishes or drizzled after turning off the heat.

 

 

 

 

 

Perilla oil is recognized worldwide as a 'super oil'.

 

It contains more than 60% alpha-linolenic acid, which is in the omega-3 series.

 

 

 

This is the highest value among the oils.

 

Alpha-linolenic acid synthesizes EPA (improving blood circulation) and DHA (promoting brain activity), which are omega-3 fatty acids.

The research team from Inha University's Department of Food and Nutrition stored sesame oil in a dark place at 25°C and observed its freshness every three months. It wasn't until the ninth month that the peroxide value (the amount of peroxides formed during oxidation) began to increase.

 

Even at 18 months, a value of 0.6 meq/kg was observed.

 

 

 

Compared to when palm oil was stored at 65°C for 6 days, and the peroxide value increased from 1 to 11

 

It is a significantly low value.

 

Storing at 65°C for 6 days is similar to storing at 25°C for 6 months.

 

 

 

Since refrigeration can diminish the taste and aroma, it is best to store it in an airtight container in a cool place away from direct sunlight.

 

 

 

On the other hand, perilla oil spoils quickly when stored at room temperature.

 

Because alpha-linolenic acid, which accounts for 60% of sesame oil, oxidizes easily.

 

Consuming oxidized omega-3 can increase reactive oxygen species in the body and may act as a carcinogen, which is dangerous.

 

 

 

In fact, the Rural Development Administration compared the oxidation patterns of perilla oil according to temperature.

 

The experiment results showed that perilla oil stored at 25°C experienced a rapid increase in peroxide value starting from 20 weeks after extraction.

 

 

 

Meanwhile, perilla oil stored at 4°C did not change even after 40 weeks.

 

Therefore, to preserve the taste and aroma of perilla oil, it should be stored in a sealed container at a low temperature below 4°C.

 

 

 

The Rural Development Administration recommends storing perilla oil in the refrigerator at home.

 

 

 

Meanwhile, mixing sesame oil and perilla oil in an 8:2 ratio can extend shelf life while maintaining flavor.
