Additionally, the isoflavones contained in soybeans lower blood cholesterol levels and dilate arteries, preventing cardiovascular diseases. Isoflavones are especially most abundant when soybeans are roasted. According to a study by the Sookmyung Women's University research team, when black soybeans called "Gyun-yi" beans were cooked by four methods—roasting, boiling, steaming, and pressure heating—the roasted soybeans had the highest isoflavone content.
◇ Foods that are not good to eat together: It is better to eat beans with seaweed or other sea vegetables like kelp or laver. The saponin components contained in beans have anticancer effects, but consuming them in large amounts can cause the body to excrete iodine. A deficiency of iodine can lead to the thyroid gland not secreting hormones properly, which may result in hypothyroidism. Iodine is abundantly found in seaweeds such as kelp and laver. Therefore, eating beans and seaweed together can help maintain a balance of iodine in the body. On the other hand, eating beans with cheese is not recommended. Cheese contains a lot of protein, fat, and calcium. When beans and cheese are eaten together, the phosphorus abundant in beans reacts with the calcium in cheese to form calcium phosphate. Calcium phosphate is not absorbed into the body and is excreted directly.
