Lee Jung-hyun's Mediterranean Salad: Taste and Health at its Best... Is the Key Ingredient "Lee Oil"?

Actress Lee Jung-hyun (44) revealed herself eating a Mediterranean salad.

On the 30th, on KBS2's "New Release - Please Take Care of My Refrigerator," Lee Jung-hyun shared a photo of herself and her husband enjoying a Mediterranean salad before a meal. "This Mediterranean salad is both delicious and healthy," she said. "Avocado oil is good for your health, so it's important to drizzle it generously." Her husband, reassured by Lee Jung-hyun's advice that they should eat everything because it's healthy, emptied his plate clean. Lee Jung-hyun's health secret, the Mediterranean salad, includes not only avocado oil but also tomatoes, burrata cheese, and cucumber. Let's take a closer look at the benefits of each ingredient.

▷Avocado oil

Avocado oil is over 80% unsaturated fatty acids and contains zero trans fat, cholesterol, and sodium. Consuming avocado oil instead of saturated fat can help control blood sugar levels and lower bad cholesterol. Avocado oil helps reduce appetite in diabetics and does not significantly increase blood sugar levels when consumed. The recommended daily intake of avocado oil is 15 mL, which is about one tablespoon. Drizzling a spoonful of avocado oil on a salad as a dressing can also help increase the absorption of nutrients in vegetables. In particular, research has shown that sprinkling avocado oil on green and yellow vegetables increases beta-carotene absorption by 15.3 times compared to eating the vegetables alone.

▷Tomato

Tomatoes are red because of a compound called lycopene. Lycopene helps prevent aging by eliminating free radicals, which are a cause of aging. Lycopene has excellent antioxidant properties and plays a role in preventing prostate cancer in men, breast cancer in women, and cancers of the digestive system. Lycopene also prevents blood clots, which helps prevent strokes and myocardial infarction. The rutin in tomatoes strengthens blood vessels and lowers blood pressure. The potassium in tomatoes also helps eliminate sodium from the body, effectively preventing high blood pressure, which can be caused by a salty diet.

▷ Burrata cheese

Burrata cheese is made from milk or buffalo milk. It's often served with tomatoes and olive oil. Burrata is low in carbohydrates and rich in protein, making it ideal for a low-carb, high-fat diet. When dieting, you lose muscle mass as well as fat. Muscle loss can lead to a decrease in basal metabolic rate, which can lead to a plateau. Consuming high-protein foods like burrata cheese can help increase muscle mass.

▷Cucumber= Cucumbers are 95% water, making them great for hydration. At 11kcal per 100g, cucumbers are lower in calories than bananas (77kcal per 100g) and tomatoes (19kcal per 100g). They contain various nutrients, including flavonoids and potassium, which help eliminate sodium and other body waste. Cucumbers also help with hangovers by promoting alcohol breakdown and excretion. However, some people avoid cucumbers due to their characteristic bitterness. In this case, peeling the cucumber and soaking it in ice water, light salt water, or vinegar water for 10 minutes will remove the bitterness. Be sure to remove the stem, as it is more bitter and pesticides may be concentrated there.
