◇Enoki mushrooms for boosting immunity Enoki mushrooms are effective in strengthening the immune system. A 100g serving contains about a quarter of an adult's daily requirement of vitamins B1 and B2, as well as 2 IU of vitamin C. Vitamin C intake also helps prevent colds and support hormone production. Fresh enoki mushrooms are 89.8% water, with carbohydrates and protein accounting for 6.4% and 2.7%, respectively. They also contain lysine, an essential nutrient that is often lacking in plant-based ingredients, helping to compensate for a lack of plant-based protein.


◇ Mushrooms are good for dieting King oyster mushrooms, especially delicious and nutritious in the fall, are rich in protein. Their protein content is estimated at 2.5-4.0%, which is twice that of asparagus or cabbage, four times that of oranges, and twelve times that of apples. Despite their nutritional value, king oyster mushrooms are low in calories and high in dietary fiber, making them a good choice for dieting. They are also rich in vitamins C and B6, which support healthy skin and hormone production. A large king oyster mushroom contains 21.4 mg of vitamin C per 100 g, seven times that of oyster mushrooms and ten times that of enoki mushrooms.

◇ Mushrooms are good for cancer prevention Mushrooms contain more phosphorus than other mushrooms. Phosphorus is an essential mineral that combines with calcium to form bones and teeth, and is used in the composition of cell membranes and DNA. Mushrooms contain about 102 mg of phosphorus per 100 g. Mushrooms also contain enzymes that digest starch and protein, so even if you eat a lot, the risk of gastrointestinal problems is low. Mushrooms also help prevent cancer because they contain antioxidants such as polyphenols, selenium, and vitamin C. In fact, a research team from the Department of Food Life and Animal Sciences at Chungbuk National University analyzed the various nutrients of three domestic mushrooms—mushrooms, king oyster mushrooms, and oyster mushrooms—and found that among the three, matsutake mushrooms had the highest polyphenol content (47.1 mg per 100 g) and thus the strongest antioxidant capacity.

They are also rich in ergosterol, a precursor to vitamin D, which helps lower blood cholesterol levels. This makes them effective in preventing hypertension and arteriosclerosis.
