Mushroom and Doenjang Hot Pot is centered around using a variety of mushrooms such as shiitake, oyster, king oyster, and enoki mushrooms. Depending on taste preferences or budget, you can include only 1 or 2 types. Additionally, add cabbage, chicken breast (or beef), green onions, and chili peppers. For the broth, prepare ingredients like dried anchovies, kelp, and onions. The seasonings are doenjang (fermented soybean paste) and minced garlic. According to data released by the American Heart Association, shiitake mushrooms ranked first among the top ten foods that increase good cholesterol (HDL) and decrease bad cholesterol (LDL). According to the National Institute of Agricultural Sciences, shiitake contains ergosterol, a precursor to vitamin D, which helps lower blood cholesterol levels. It is also rich in high-quality fiber, which inhibits the absorption of cholesterol into the body. The lentinan component has medicinal properties that boost immunity and inhibit the proliferation of cancer cells, to the extent that it is used as an ingredient in pharmaceuticals.

Enoki mushrooms, oyster mushrooms... regulate blood sugar and blood cholesterol levels

Enoki mushrooms are crispier than other mushrooms, but also have a chewy texture. They are rich in antioxidants such as selenium, vitamin B1, B2, niacin, which help reduce body oxidation (aging), as well as dietary fiber that is good for constipation and dieting. They also contain a high amount of beta-glucan, which helps regulate blood sugar and blood cholesterol levels, thereby inhibiting the formation and accumulation of fat in the body. They contribute to the prevention and control of hyperlipidemia and arteriosclerosis, and also help prevent diabetes. The dietary fiber in oyster mushrooms also has the effect of lowering blood cholesterol levels.

Protein from chicken and mushrooms with a synergistic effect... Rich in essential amino acids

According to the National Standard Food Composition Table, 100g of chicken breast contains as much as 24g of protein. The protein in chicken has a higher total content and essential amino acids such as methionine compared to beef. It can also have a synergistic effect with mushroom protein. It contains less saturated fat, which is abundant in meat fat, and more unsaturated fats, which have the opposite effect, than pork and beef. Removing the skin and fat makes it much lower in calories than beef or pork, making it suitable for dieting.
