Onions are foods that are closely related to our diet. As they are known to be healthy, the number of people seeking them is increasing. Fresh onions can be cooked in various ways such as soups, stews, salads, and stir-fries, and served at the table. They also go well with protein-rich eggs. Egg scrambled dishes or onion egg soup are both delicious and contribute to health.

A research article was published in the Korean Journal of Food Science and Technology indicating that onions may inhibit inflammatory responses caused by high blood sugar. This is interpreted as an anti-inflammatory effect mediated by flavonoids, which are antioxidant components that reduce oxidative damage (damage-aging) in the body. The study analyzed the correlation between diabetes, its complications, and inflammatory factors.

 

In this study, sulfur onion juice was used, but regular onions also help regulate blood sugar. The quercetin component of onions prevents cells from being attacked by reactive oxygen species and lipid peroxides, contributing to the prevention and recovery of inflammation and wounds.

There are people who claim that eating onions along with pork and other meats is good for vascular health. It is true that the quercetin and allicin components of onions significantly contribute to blood health. They help prevent and manage vascular diseases such as hyperlipidemia and arteriosclerosis by inhibiting the accumulation of saturated fats and cholesterol from meat in the blood vessels.

The allicin component in garlic helps to relax narrowed and hardened blood vessels, thereby lowering blood pressure.

 

Eggs rich in protein, synergy with onions... How about a simple egg and onion soup?

 

According to the National Standard Food Composition Table (per 100g), two eggs contain 13.49g of protein. This is a substantial amount even when compared to chicken breast, a symbol of high protein content (22.97g). It also contains choline, which is beneficial for brain health. Making scrambled eggs in the morning and egg-onion soup in the evening can be both delicious and enhance health benefits.

 

Egg and onion soup is easy to make. Add onions, green onions, and other ingredients to the broth and bring to a boil, then add minced garlic. After boiling further, beat in eggs to finish.
