As modern society advances, it seems that more people than expected are living with illnesses.

So, for the health of my family, I add this when cooking rice every day.

This is Amaranth.

Barley, beans, millet, oats, and Kamut are quite popular and widely adopted.

However, some of you may already know about Amaranth, but I think there are still some who don't, so I will introduce it. Haha

Amaranth is a grain that has been cultivated in the South American Andes highlands for over 5,000 years, and its name in Greek means "unfading flower." It is an annual plant belonging to the amaranth family.

In our country, amaranth has been introduced and cultivated mainly in Gangwon Province for the past few years, but it has not yet become popular and remains largely unfamiliar. There are about 50 species of amaranth, and its seeds are cooked with rice, its leaves are eaten as salad greens or dried and brewed into tea, and young sprouts have a good texture and are eaten in salads or as seasoned greens. Additionally, its flowers are beautiful and used for ornamental purposes, and they have the flower language of "undying love." Commonly called super grains, amaranth is a high-protein, high-calcium food with a balanced amino acid composition and 20% protein content.

Especially rich in amino acids such as lysine and taurine, which are important for the human body, and containing large amounts of minerals and antioxidants, it has excellent effects on diabetes and significantly lowers cholesterol. It is also known to be beneficial for high blood pressure, anti-cancer effects, and cell regeneration, making its nutritional value increasingly recognized recently.

Amaranth is rich in protein and contains plant-based squalene, so it is also called a divine grain. Let's start exploring the benefits of amaranth now.

Amaranth, rich in plant-based cholesterol, has been shown in research to lower blood cholesterol levels. Additionally, the plant-based squalene found in amaranth has the effect of lowering cholesterol, making it especially good for diabetes, hypertension, and weight management.

 

So, when I cook rice, I probably cook it together with amaranth.

Amaranth preparation method to reduce nutrient loss

 

It is generally washed multiple times in flowing water, and because it is very small, it is better to use a fine mesh to wash it so that it does not wash away with the water.

Amaranth must be cooked before eating, and when cooking rice with amaranth, a ratio of about 7:3 or 6:4 between rice and amaranth is considered appropriate. For those trying it for the first time, there may be some resistance, so try adding just one spoonful with a rice scoop and cook the rice.

How to store amaranth to prevent nutritional loss

 

Store in a cool, well-ventilated place away from direct sunlight, sealed to maintain low temperature and humidity. After opening, there is a risk of spoilage or deterioration, so it is recommended to reseal and store immediately in the refrigerator.

 

♣ Food Pairing

When added during cooking, it helps supplement the lacking protein, and since it contains a lot of fiber, adding it to salads can promote gut health. It is also good to mix with honey and make it into a crunchy snack.

 

 

The amaranth I am eating now was sent to me by my parents who grew it themselves.

So, amaranth is stored in a sealed container to prevent spoilage and kept refrigerated.

 

We are protecting our family's health and preventing hypertension and diabetes with healthful grains like amaranth.

      귀리나 현미는 겉껍질이 있어서 씹기 불편하지만 아마란스는 워낙작아서 식감이 나쁘지않아요 아주작어서 씹으면 한번씩 톡하고 터지는건있어요
