Tteokguk is the first food that comes to mind when thinking of the New Year. However, for those on a diet, it is not a food they can enjoy freely. Let's learn how to eat tteokguk healthily.

 

◇Eating mainly with chunky ingredients

 

The main ingredient of rice cake soup, garaetteok, is a carbohydrate lump. 100g of garaetteok contains 209 kcal, with 3.5g of protein, 0g of fat, and 47.8g of carbohydrates. Rice cakes classified as refined carbohydrates contain almost no fiber or nutrients, leaving only calories, which cause blood sugar levels to rise quickly when consumed. Therefore, diabetics should prefer eating the toppings when consuming rice cake soup. Eleven pieces of garaetteok have the same caloric content as one-third of a bowl of rice. If you usually eat one-third of a bowl, you should eat one ladle of rice cake soup; if you eat two-thirds, then two ladles. It is advisable to adjust the number of garaetteok according to your usual meal portion.

 

◇ Using Mae Saeng-i instead of rice cakes

 

Reducing the amount of rice cakes used in rice cake soup and adding other ingredients to balance nutrition is also a good idea. Dumplings made with tofu, chives, and minced pork neck meat go well with rice cake soup and provide a good nutritional combination. Adding seaweed soup (maesaengi) is another option. It contains not only protein and calcium but also minerals like iron, helping to balance the high carbohydrate content of rice cake soup nutritionally. Moreover, it has a soft texture and can enhance the refreshing taste of the broth. Maesaengi is particularly rich in dietary fiber, which aids intestinal motility and promotes smooth bowel movements, making it a good diet food during the winter when weight gain is common.

 

◇Adding chicken breast with little oil

 

To maintain weight, it is better to include chicken breast instead of heavily marbled beef. This is because chicken breast contains less saturated fat, which raises cholesterol and triglyceride levels. Per 100g, chicken breast has 22.98g of protein and 1g of saturated fat, whereas the same 100g of beef brisket and pork neck contain 7g of saturated fat (US Department of Agriculture). This is about seven times more than chicken breast. Chicken breast also has less fat, allowing you to enjoy a light and savory rice cake soup.

 

Add a nutty flavor with perilla seed powder

 

If you want to add a simple nutty flavor to rice cake soup, perilla seed powder is a good choice. The vitamin A, C, and E contained in perilla seeds are absorbed into the body and trigger antioxidant reactions, helping to activate intestinal function and regain vitality. Perilla seeds contain 63% of essential fatty acids, such as linoleic acid, an omega-6 fatty acid that the body cannot synthesize, and alpha-linolenic acid, an omega-3 unsaturated fatty acid. These help prevent cholesterol buildup in blood vessels and are effective in preventing cardiovascular diseases. However, if boiled for a long time, the flavor may become dull, so it is best to add it at the very end.
