Whole Cucumber Kimbap
Cucumbers have a taste that people either love or dislike, but their nutritional value is definitely certain. The dipping sauce that adds umami flavor is made healthier by using stevia instead of sugar and soy sauce instead of salt.

Multigrain rice contains more dietary fiber compared to white rice, which helps to raise blood sugar levels more slowly. It is also richer in vitamins and minerals than white rice. It is recommended to cook multigrain rice using only five types of grains. Adding too many varieties of grains can actually reduce the nutritional benefits and make digestion more difficult. In fact, a research team from Korea Wuseok University analyzed the nutritional components of mixed grains and found that the five-grain mixture had the highest protein and mineral content, as well as the most excellent antioxidant effects.

Its abundant soluble dietary fiber also slows the absorption of glucose, gradually raising blood sugar levels.

Ingredients & Recipe (per serving)
Kim 1 sheet, mixed grain rice 140g, 1 cucumber, 1 egg, a little cooking oil

※Ssamjang: 1 teaspoon of red pepper paste, 1/2 teaspoon of soybean paste, a little minced garlic, a little sesame seeds, a little sesame oil, a little stevia
※Danchot Water: 2 teaspoons of vinegar, a pinch of salt, a small amount of stevia, a little sesame oil

1. After making the seasoning sauce, add it to the mixed grain rice and stir evenly.
2. After washing the cucumber thoroughly, peel it and cut the ends to match the length of the seaweed.
3. Beat the eggs to make egg mixture, pour it into a frying pan, spread it out evenly, and cook slowly over low heat.
4. Spread a thin layer of multigrain rice on the rough surface of the kim.
Place an egg on top of the rice, add cucumber, and roll it into kimbap.
Cut the kimbap into bite-sized pieces.
Mix the ingredients in the specified amount to make ssamjang, then dip and enjoy.
