"I thought it was okay," but washing eggs with water can actually be dangerous... What is a safe cleaning method?

What do you do after purchasing eggs?

I washed it with water, wiped it with a dishcloth, placed it in an egg-specific container, and stored it in the refrigerator.

However, washing eggs with water makes them more vulnerable to contamination.

Store at a temperature of 0 to 4 degrees Celsius deep inside the refrigerator

 

You should remember these three things and manage and store the eggs accordingly.

 
 

The outer layer of an egg, called the cuticle, protects it from external bacteria. Washing with water can destroy this layer, allowing bacteria to penetrate inside the egg.

If the eggshell is dirty, it is better to wipe it with a clean dry cloth rather than washing it with water. The cloth used to wipe the eggs should be washed separately, as there is a high possibility that salmonella bacteria may be present on the cloth.

However, if this dishcloth touches the sink or cooking utensils, the risk of food poisoning increases due to cross-contamination. According to the Korea Food and Drug Administration, the main cause of Salmonella food poisoning is foods cooked with eggs, so care should be taken not to touch other ingredients with hands that have touched eggshells or egg liquids.

To store eggs properly, place them with the pointed end (tip) facing downward and the relatively rounded end (bulge) facing upward. Egg shells have over 7,000 pores that allow air to pass in and out of the shell. Since these pores are more concentrated at the rounded end, if the rounded end is positioned below, air circulation may be hindered, increasing the risk of bacterial growth.

It is also important to store eggs inside the refrigerator. Using the egg tray on the door can cause the eggs to shake each time the door is opened and closed, which may loosen the egg membrane. If the membrane is damaged, the freshness of the eggs decreases. The entrance of the refrigerator should also be avoided. Places exposed to outdoor air tend to have higher temperatures, which can negatively affect the quality.

The optimal temperature for storing eggs is between 0 and 4 degrees Celsius. When it exceeds 7 to 8 degrees, the risk of Salmonella bacteria proliferation increases. According to the Rural Development Administration's National Institute of Animal Science, eggs stored at 17 degrees lost quality after 17 days, whereas eggs stored at 5 degrees remained fresh for about 106 days, or approximately three months, with little change in freshness.

Therefore, the best way to maintain the freshness and safety of eggs is to avoid washing them with water, store them with the pointed end facing downward, and keep them in the deep part of the refrigerator at a temperature of 0 to 4 degrees Celsius.
