Broccoli stems are rich in vitamins that boost immunity

 

Consuming broccoli stems can enhance immune function and prevent various cardiovascular diseases. According to the United States Department of Agriculture, broccoli stems contain 93.2mg of vitamin C, 48mg of potassium, and 20µg of vitamin A per 100g. Vitamin C and vitamin A have antioxidant effects, which are necessary for boosting immunity. Potassium helps regulate blood pressure and reduces the risk of cardiovascular diseases.

 

There are also research findings suggesting that broccoli stems help prevent stomach cancer. According to a study presented at the Korean Society for Microbiology and Biotechnology in 2014, continuous consumption of broccoli stems can inhibit the production of nitrosamines, carcinogenic substances generated in the stomach.


It's good to peel the outer skin of the stem.

 

When eating broccoli stems, it is better to peel off the outer skin with a knife. This helps to somewhat soften the rough texture of the stem. However, the last 2 to 5 centimeters of the broccoli stem should be cut off and discarded. The lower part of the stem is very coarse in texture and not suitable for eating. In fact, the closer the stem is to the flower cluster, the softer it becomes.

 

Broccoli should be steamed and eaten without adding water. This allows nutrients to be absorbed most effectively by the body. According to research from the Department of Nutrition at the University of Illinois Urbana-Champaign, steaming broccoli for about 5 minutes maximizes its anticancer effects.

When cooking with broccoli, it is good to stir-fry it with onions in oil. Broccoli enhances resistance to viruses.

Broccoli pairs well with squid. The taurine in squid and the dietary fiber in broccoli work together to lower blood cholesterol levels. Eating lightly blanched broccoli and squid dipped in spicy red pepper paste makes for a delicious and nutritious side dish.
