Depending on how you eat it, there can be differences in the benefits of refrigerated rice.

Alpha-colored rice

When water is poured onto raw rice with a structure that does not easily digest and the lid is closed and heated, the hard structure breaks down, resulting in alpha-processed rice that is easier to digest.

 

Beta-processed rice

When the warm rice cools down, it gradually dries out and hardens, and some of the rice starch undergoes beta-formation.

At this time, this starch is called resistant starch.

 

What is resistant starch?

It has the characteristic of relatively poor digestion and absorption, resulting in less increase in blood sugar and less weight gain.

Just cooling the rice does not turn all the starch in the rice into resistant starch.

 

20% of the starch in the rice we eat is amylose, and the remaining 80% is amylopectin.

 

This 20% of amylose is well converted into resistant starch, while amylopectin does not change easily.

But the reason why frozen rice has no weight loss effect is

When rice is frozen in the freezer, the movement of hydrogen becomes difficult, making it harder for resistant starch to form easily.

To make resistant starch rice that does not sharply raise blood sugar and helps with dieting, store the rice in the refrigerator (for more than 6 hours). However, considering that it contains 20% resistant components, eating too much of it can lead to weight gain.
