Meatballs are a dish made by finely chopping meat, seasoning it, and frying it in oil. Today, instead of greasy meat, we prepared 'tofu balls' made with tofu and vegetables. Enjoy!

Tofu balls

The softness of the tofu combined with the chewy texture of the vegetables creates a sensation comparable to regular meatballs. Be sure to remove all excess water from the tofu to enhance its chewy texture.

Reliable plant-based protein tofu

Tofu is a high-quality protein source suitable for people with diabetes. It is made from plant-based protein, has a low fat content, and is beneficial for cardiovascular health. Its calorie content is also low at 97 kcal per 100 grams, making it suitable to be included in every meal. Before cooking, freezing and then thawing tofu can help remove moisture, increasing its nutritional density and allowing for greater protein intake.

Spicy trio with excellent anti-inflammatory and antioxidant effects

Sulfur compounds and flavonoid components found in onions help reduce inflammation in the body and improve insulin sensitivity, aiding blood sugar regulation. Allicin, which gives green onions their spicy flavor, has excellent anti-inflammatory and antimicrobial effects, enhancing the immunity of diabetic patients. Garlic promotes blood circulation and helps eliminate cholesterol and waste products in the blood, benefiting vascular health.

 

Carrots for blood sugar control and nutritional supplementation

Beta-carotene, the main component of carrots, is beneficial for preventing diabetes complications by protecting blood vessels and reducing inflammation in the body. The dietary fiber abundant in carrots slows down digestion and absorption, preventing rapid spikes in blood sugar levels. Additionally, they contain various vitamins and minerals, allowing diabetes patients to effectively supplement a wide range of nutrients.

 

 

Ingredients & Recipe (for 2 servings)

1 block of tofu, 1 pack of enoki mushrooms, 1/3 onion, 50g of green onion, 50g of carrot, 1 egg, 1 tablespoon of minced garlic, 1/4 cup of bread crumbs, a pinch of salt, a pinch of pepper, a little cooking oil

Source: 1 tablespoon soy sauce, 1 tablespoon tomato ketchup, 1/8 onion, 1/4 yellow paprika, 1/4 red paprika, 2 cloves garlic, a pinch of stevia, a little cooking oil

1. Wrap the tofu in a cloth and squeeze out the excess water.

2. Finely chop the vegetables and mushrooms.

3. Mix tofu with a small amount of vegetables, mushrooms, eggs, bread crumbs, salt, and pepper.

4. Shape the dough into small balls to make meatballs.

5. Use spray oil to minimize oil usage, then bake the tofu balls. If necessary, add a little water to the frying pan, cover with a lid, and cook until tender.

6. Roll the meatballs in the sauce to let the flavor soak in, then place them in a bowl.

1. Cut the onions and bell peppers into 1.5*1.5 cm pieces.

2. Garlic is sliced.

3. Lightly pour cooking oil into a frying pan and first sauté the garlic and onions.

4. When the onions become transparent, add a little soy sauce, ketchup, and stevia, then bring to a boil.

5. Once the sauce is complete, place the tofu balls in a bowl and pour the sauce over them before serving.

I ate a lot of tuna or potatoes.

I only used to make tofu with fermented soybeans.

Tofu balls haha I think they'd also be good as a snack.

    두부가 몸에 정말 좋더라구요. 두부볼은 생각도 못 했는데 건강에도 좋을 것 같네요. 고기를 먹지 않는 채식주의자들도 두부는 먹을 수 있어서 여기저기 수요가 많은 음식 중 하나더라고요!! 튀겨 먹어도 좋고 그냥 생으로 먹어도 좋고요. 김치와 곁들여서 먹어도 좋은 음식 중 하나입니다. 
    저도 이 글을 참고하여 레시피를 잘 읽어서 요리를 해 봐야겠네요. 혹시 만들어 보셨나요? 레시피만 보면 간단하지 않고 꽤 어려워 보이는데요. 제가 요리를 잘 못 해서요. ㅠㅠ ㅎㅎ 혹시 만들어 보신 분이 있다면 꿀팁과 맛은 어땠는지 정보 부탁드릴게요. 정보 감사합니다. 잘 읽었습니다.

    바로 어제! 두부 유부초밥을 해먹어서 두부가 남아있어요! 남은 두부 그냥 부쳐먹으려고 했는데 요거 도전해 볼까봐요ㅎㅎ 불을 사용하고 소스를 따로 만들어야 한다는게 요리 똥손인 제겐 조금 복잡하지만 그대신 그만큼 소스도 저당이고 기름도 적게 들어가서 건강엔 훨씬 더 좋겠죠!?! 너무 밍숭맹숭한 맛도 아니고 지나치게 자극적이지도 않아서 먹고나면 속도 편하고 당뇨뿐만 아니라 다이어트에도 좋을것 같네요. 자투리 남은 채소들도 이참에 같이 해결하기 딱 좋은 레시피같아요^^ 덕분에 좋은 레시피 하나 알아갑니다!

    두부볼은 처음 들어봐요. 동그랑땡 대신에 그렇게 만드는군요. 몸에 좋은 거를 다 같이 넣으니까 건강에 좋을 것 같아요. 한번 만들어 먹어봐야겠네요. 그리고 두부를 얼려서 보관한다는 것이 참 좋은 아이디어 같아요.
