Braised Burdock Root☆
Ingredients: 300g of burdock root (about one root), 2 cups of water, 1 tablespoon of vinegar, 3 tablespoons of soy sauce, 3 tablespoons of sugar, 2 tablespoons of rice syrup
1) After thoroughly washing the burdock, peel the skin with the back of a knife.
2) Slice the burdock root diagonally, then add 3 cups of water and bring to a boil.
3) When the water boils, add the burdock and immediately add 1 tablespoon of vinegar.
Add vinegar, turn off the heat after 2 minutes, and lightly rinse the burdock with cold water.
5) Add oil to a frying pan, stir-fry the burdock for 4 minutes, then add 2 cups of water, 3 tablespoons of soy sauce, and 2 tablespoons of sugar, and simmer.
6) When the broth thickens, add 2 tablespoons of rice syrup and stir-fry quickly for 1 minute.
I made it to put inside kimbap, but it's also good as a side dish.
