However, it is difficult to enjoy the natural texture of raw vegetables with frozen ones. During the thawing process, the tissue can become soft, which differs from the crispness of fresh vegetables. They also lack the fresh taste and aroma of raw vegetables.
It is not advisable to thaw frozen vegetables and consume them raw. In fact, according to a study published in the Journal of Food Protection, consuming frozen vegetables raw poses a risk of infection from bacteria such as Listeria or E. coli that can cause food poisoning. The research team stated, "While it is commonly believed that freezing food destroys harmful bacteria or germs, some bacteria are not eliminated by freezing vegetables," and "To prevent infectious diseases, frozen vegetables should be cooked, such as by heating, before consumption."
In summary, if it is possible to consume them as soon as possible, fresh vegetables can be chosen, while frozen vegetables can be selected considering storage and cooking convenience.
