It is well known that consuming fresh vegetables is good for health. So, what about frozen vegetables?

Frozen vegetables are not nutritionally inferior to fresh vegetables. Professor Song Tae-hee of the Department of Food and Nutrition at BaeHwa Women's University said, "Frozen vegetables are usually rapidly frozen shortly after harvest, so their nutrients are preserved in a fresh state," and "unless frozen vegetables are stored for many years, the natural nutrients of the vegetables are not significantly destroyed." According to reports in the American health magazine 'WebMD,' vegetables begin to lose vitamin content immediately after harvest, and after 2-3 days of room temperature storage, half of the vitamins are lost. In other words, unless fresh vegetables are consumed immediately after harvest or frozen, their nutritional content decreases.

 

Frozen vegetables have the advantage of preserving nutrients for a long time, allowing them to maintain consistent quality regardless of the season. Professor Song Tae-hee said, "Frozen vegetables are highly convenient for cooking and can be enjoyed in various dishes." However, it is difficult to enjoy the natural texture of raw vegetables with frozen ones. During the thawing process, the tissue can become soft, which differs from the crispness of fresh vegetables. They also lack the fresh taste and aroma of raw vegetables.

It is not advisable to thaw frozen vegetables and consume them raw. In fact, according to a study published in the Journal of Food Protection, consuming frozen vegetables raw poses a risk of infection from bacteria such as Listeria or E. coli that can cause food poisoning. The research team stated, "While it is commonly believed that freezing food destroys harmful bacteria or germs, some bacteria are not eliminated by freezing vegetables," and "To prevent infectious diseases, frozen vegetables should be cooked, such as by heating, before consumption."

In summary, if it is possible to consume them as soon as possible, fresh vegetables can be chosen, while frozen vegetables can be selected considering storage and cooking convenience.

    냉동채소는 찝찝해서 직접 손질한게
    아니라면 구입하기 망설여지더라고요
    집에서는 나물 데쳐서 보관해봤고요
    고추랑 대파 버섯 손질해서 각 밀폐용기에
    담아 필요시 꺼내서 볶음이나 국에 넣어 먹어요
