Cucumbers are good for dieting and health, but many people avoid them because of their distinctive taste.

If you dislike cucumbers but enjoy eating pickles, can you still fully enjoy the health benefits of cucumbers just by eating pickles?

 

Do not eat too much pickled vegetables like pickles or oi-ji. 

Eating excessively can irritate the esophagus. A study published in the British Journal of Cancer found that consuming a large amount of pickled vegetables can increase the risk of esophageal cancer by up to twice. This is based on a meta-analysis of 34 papers on the relationship between food and esophageal cancer. The World Cancer Research Fund also warned that consuming too many preserved foods like pickled vegetables can increase the risk of cancer. Pickled vegetables are highly acidic and can be harmful to teeth. The acetic acid in vinegar used during pickling can damage teeth. Additionally, some products contain added sugar, and frequent consumption can lead to tooth decay.


Cucumbers are best eaten raw.

 

It may be disliked for its unique taste, but since 95% is water, it has a strong refreshing quality that helps quench thirst.

 

Antioxidants like flavonoids are also diverse. They are rich in potassium, which helps excrete sodium from the body. It is also a diet food. With only 11 kcal per 100g, it has fewer calories than bananas, which have 77 kcal per 100g, and tomatoes, which have 19 kcal per 100g. It contains vitamin C, which is involved in skin collagen synthesis and helps with skin health and fatigue recovery, but vitamin C is sensitive to heat and is easily destroyed when cooked. To maximize vitamin C intake from cucumbers, they should be eaten raw.

 

If you dislike the characteristic taste of cucumbers, rub the surface with coarse salt and rinse with water. This will help to somewhat reduce the bitterness. The stem end has a particularly strong bitter taste and may contain pesticides, so remove it.
