Meatballs are a dish made by finely mincing meat, seasoning it, and deep-frying it. Today, I have prepared 'Tofu Balls,' made with tofu and vegetables instead of fatty meat. Enjoy!

Tofu balls

The softness of the tofu and the crunchiness of the vegetables combine to create a texture comparable to regular meatballs. The moisture must be completely removed from the tofu to enhance the chewiness.

 

What's different?

Hearty plant-based protein tofu

Tofu is a high-quality protein source suitable for diabetic patients. Composed of plant-based protein and low in fat, it is beneficial for cardiovascular health. With a low calorie content of 97 kcal per 100g, it is also suitable to be consumed with every meal. Freezing and thawing tofu before cooking allows water to drain out, increasing nutrient density and thus increasing protein intake.

A spicy trio with excellent anti-inflammatory and antioxidant effects

The sulfur compounds and flavonoids contained in onions help regulate blood sugar by reducing inflammation in the body and improving insulin sensitivity. Allicin, which gives green onions their pungent taste, has excellent anti-inflammatory and antibacterial effects, enhancing the immunity of diabetic patients. Garlic promotes blood circulation and eliminates blood cholesterol and waste products, making it beneficial for vascular health.

 

Carrots for blood sugar control and nutritional supplementation

Beta-carotene, the main component of carrots, is beneficial for preventing complications of diabetes by protecting blood vessels and reducing inflammation in the body. The dietary fiber abundant in carrots slows down the rate of digestion and absorption, preventing a rapid rise in blood sugar levels. In addition, carrots contain various vitamins and minerals, allowing diabetic patients to effectively supplement a wide range of nutrients.

 

 

Ingredients & Recipe (2 servings)

tofu 1 pack, Enoki mushrooms 1 pack, onion 1/3 of a piece, green onion 50g, carrot 50g, egg 1 item, minced garlic 1 tablespoon, breadcrumbs 1/4 cup, salt a little, pepper a little, cooking oil a little

※sauce : soy sauce 1 tablespoon, Tomato ketchup 1 tablespoon, onion 1/8 of an item, Paprika (yellow) 1/4 piece, Paprika (red) 1/4 piece, garlic 2 tolls, Stevia a little, cooking oil a little

1 Wrap the tofu in a cheesecloth and squeeze out the water tightly.

2 Finely chop the vegetables and mushrooms.

3 Add the vegetables and mushrooms from step 2, an egg, breadcrumbs, a little salt and pepper to the tofu and knead.

4 Shape the dough into small balls to make them like meatballs.

5 After frying the tofu balls using spray oil to minimize oil, add a little water to the pan if necessary, cover with a lid, and cook until tender.

6 Roll the meatballs in the sauce to allow the seasoning to soak in, then place them in a bowl.

1 Cut the onion and bell pepper into 1.5*1.5cm pieces.

2 Slice the garlic.

3 Lightly coat a frying pan with cooking oil and sauté the garlic and onions first.

4 When the onions become translucent, add a little soy sauce, ketchup, and stevia and bring to a boil.

5 Once the sauce is finished, place the tofu balls in a bowl, pour the sauce over them, and serve.

I used to make and eat a lot of tuna and potatoes,

I only ate tofu pancakes.

Tofu balls lol. For some reason, I think they would be good as a snack.

    두부가 몸에 정말 좋더라구요. 두부볼은 생각도 못 했는데 건강에도 좋을 것 같네요. 고기를 먹지 않는 채식주의자들도 두부는 먹을 수 있어서 여기저기 수요가 많은 음식 중 하나더라고요!! 튀겨 먹어도 좋고 그냥 생으로 먹어도 좋고요. 김치와 곁들여서 먹어도 좋은 음식 중 하나입니다.

    바로 어제! 두부 유부초밥을 해먹어서 두부가 남아있어요! 남은 두부 그냥 부쳐먹으려고 했는데 요거 도전해 볼까봐요ㅎㅎ 불을 사용하고 소스를 따로 만들어야 한다는게 요리 똥손인 제겐 조금 복잡하지만 그대신 그만큼 소스도 저당이고 기름도 적게 들어가서 건강엔 훨씬 더 좋겠죠!?! 너무 밍숭맹숭한 맛도 아니고 지나치게 자극적이지도 않아서 먹고나면 속도 편하고 당뇨뿐만 아니라 다이어트에도 좋을것 같네요. 자투리 남은 채소들도 이참에 같이 해결하기 딱 좋은 레시피같아요^^ 덕분에 좋은 레시피 하나 알아갑니다!

    두부볼은 처음 들어봐요. 동그랑땡 대신에 그렇게 만드는군요. 몸에 좋은 거를 다 같이 넣으니까 건강에 좋을 것 같아요. 한번 만들어 먹어봐야겠네요. 그리고 두부를 얼려서 보관한다는 것이 참 좋은 아이디어 같아요.
