Tofu balls
The softness of the tofu and the crunchiness of the vegetables combine to create a texture comparable to regular meatballs. The moisture must be completely removed from the tofu to enhance the chewiness.

Ingredients & Recipe (2 servings)
tofu 1 pack, Enoki mushrooms 1 pack, onion 1/3 of a piece, green onion 50g, carrot 50g, egg 1 item, minced garlic 1 tablespoon, breadcrumbs 1/4 cup, salt a little, pepper a little, cooking oil a little
※sauce : soy sauce 1 tablespoon, Tomato ketchup 1 tablespoon, onion 1/8 of an item, Paprika (yellow) 1/4 piece, Paprika (red) 1/4 piece, garlic 2 tolls, Stevia a little, cooking oil a little
1 Wrap the tofu in a cheesecloth and squeeze out the water tightly.
2 Finely chop the vegetables and mushrooms.
3 Add the vegetables and mushrooms from step 2, an egg, breadcrumbs, a little salt and pepper to the tofu and knead.
4 Shape the dough into small balls to make them like meatballs.
5 After frying the tofu balls using spray oil to minimize oil, add a little water to the pan if necessary, cover with a lid, and cook until tender.
6 Roll the meatballs in the sauce to allow the seasoning to soak in, then place them in a bowl.
1 Cut the onion and bell pepper into 1.5*1.5cm pieces.
2 Slice the garlic.
3 Lightly coat a frying pan with cooking oil and sauté the garlic and onions first.
4 When the onions become translucent, add a little soy sauce, ketchup, and stevia and bring to a boil.
5 Once the sauce is finished, place the tofu balls in a bowl, pour the sauce over them, and serve.
