How to make simple and delicious japchae

Material Information
140g of cellophane noodles, 10g of wood ear mushrooms, 1 small green onion, 1 medium onion, 1 medium carrot, 20g of dried shiitake mushrooms, 100g of spinach, 2 tablespoons of sesame oil, 2 tablespoons of sesame seeds
Seasoning sauce: 90ml soy sauce, 1 tablespoon rice wine, 1 tablespoon cooking wine, 1 tablespoon corn syrup, 2 tablespoons cooking oil
Beef Seasoning Sauce: 150-200g of beef, 2 tablespoons of soy sauce, 1/3 tablespoon of sugar, 1/2 tablespoon of starch syrup, 1 1/2 tablespoons of chopped green onion, a little pepper, 1 tablespoon of sesame oil, 2/3 tablespoon of minced garlic, 1 tablespoon of rice wine, 1 tablespoon of plum extract
1T = based on 1 tablespoon (tablespoon measure)
Japchae recipe
Remove the stem part of the enoki mushrooms and cut them into bite-sized pieces.
Soak the mushrooms in water for at least 1 hour and 30 minutes. After soaking, wash the mushrooms thoroughly, squeeze out the excess water, and set them aside.
Adjust the boiling time of the noodles according to their thickness. At this time, boil them about 2 minutes less than the original recommended time. Since they will be stir-fried together later, they will cook properly during the stir-frying process.
Boiled glass noodles should be rinsed 2 to 3 times with cold water and drained as much as possible.
Prepare other ingredients while the noodles are boiling.
Mix together 150-200g of beef in a bowl, 2 tablespoons of soy sauce, 1/3 tablespoon of sugar, 1/2 tablespoon of corn syrup, 1 1/2 tablespoons of chopped green onions, a little pepper, 1 tablespoon of sesame oil, 2/3 tablespoon of minced garlic, 1 tablespoon of rice wine, and 1 tablespoon of plum extract. Then add and mix in shiitake mushrooms as well.
Julienne carrots, julienne onions, diagonally slice green onions, chop spinach into bite-sized pieces.
Combine 90ml soy sauce, 1 tablespoon rice wine, 1 tablespoon cooking wine, 1 tablespoon corn syrup, and 2 tablespoons cooking oil in a bowl and mix.
How to stir-fry japchae
Please sauté the beef in high heat beforehand.
Add the wood ear mushrooms at this time and stir-fry together.
Put the seasoning sauce into a thick pan and bring to a boil. Once boiling, add the glass noodles and cook until most of the seasoning remains.
Once the seasoning boils, add all the vegetables and cook together.
Stir-fry the vegetables over high heat until they are about half cooked. If they are overcooked, the vegetables will release water and the taste will be ruined.
When the vegetables are half cooked, add the meat and mushrooms, stir-fry together for another minute, then turn off the heat.
Once the japchae is cooked, spread it out in a wide basin and be sure to let it cool. This prevents it from becoming watery or sticky.
Add sesame oil and sesame seeds at the end and mix to finish! You can cook it simply and conveniently by stir-frying all the ingredients at once.
