Material Guide
140g of noodles, 10g of oyster mushrooms, 1 small green onion, 1 medium onion, 1 medium carrot, 20g of dried shiitake mushrooms, 100g of spinach, 2T of sesame oil, 2T of sesame seeds
Seasoning sauce: 90ml soy sauce, 1T rice wine, 1T cooking wine, 1T corn syrup, 2T cooking oil
Beef seasoning sauce: 150-200g beef, 2T soy sauce, 1/3T sugar, 1/2T corn syrup, 1 1/2T thinly sliced green onions, a little pepper, 1T sesame oil, 2/3T minced garlic, 1T rice wine, 1T plum extract

Japchae Recipe
Remove the stems from the oyster mushrooms with a knife. Then cut them into bite-sized pieces.
Soak mushrooms in water for 1 hour and 30 minutes before cooking. Wash the soaked mushrooms thoroughly, squeeze out any excess water, and drain.
Adjust the boiling time of the noodles depending on their thickness. Boil for about 2 minutes less than the original boiling time. Please. Since we will be stir-frying them together later, they will be cooked properly during the stir-frying process.
Wash the boiled noodles in cold water 2-3 times and remove as much moisture as possible.
While the noodles are boiling, prepare the other ingredients.
In a bowl, add 150-200g beef, 2T soy sauce, 1/3T sugar, 1/2T corn syrup, 1 1/2T thinly sliced green onions, a little pepper, 1T sesame oil, 2/3T minced garlic, 1T cheongju, and 1T plum extract. Add shiitake mushrooms and mix.
Slice carrots, slice onions, chop green onions diagonally, and cut spinach into bite-sized pieces.
Mix the seasoning ingredients (90ml soy sauce, 1T cheongju, 1T mirin, 1T corn syrup, 2T cooking oil) in a bowl.
How to Stir-fry Japchae
Fry the beef over high heat beforehand.
At this time, add oyster mushrooms and stir-fry together.
Add the seasoning sauce to a heavy pan and bring to a boil. Once it starts to boil, add the noodles and simmer until only a little of the seasoning remains.
Once all the seasoning has boiled, add all the vegetables and boil together.
Continue to stir-fry over high heat until the vegetables are half cooked. If they are overcooked, the vegetables will release liquid and taste bad.
When the vegetables are half cooked, add the meat and mushrooms and stir-fry together for another minute, then turn off the heat.
Spread the finished japchae in a large bowl and let it cool. This will prevent it from becoming watery and soggy.
Finally, add sesame oil and mix to complete! It's great because you can stir-fry all the ingredients at once, making it simple and hassle-free.
