Buckwheat noodles and tofu sushi

When choosing buckwheat noodles, select products with a high buckwheat content to minimize wheat flour intake. It is best to cook buckwheat noodles as quickly as possible. Be aware that rutin, which helps regulate blood pressure and blood sugar levels, is a water-soluble component, so the longer you boil the noodles, the more the rutin content decreases.

Nutrient-rich buckwheat noodles

Buckwheat noodles have lower calories and higher dietary fiber content than rice, providing a feeling of fullness when consumed. Compared to wheat flour noodles, they do not cause a rapid increase in blood sugar levels, making them good for diabetes management. The rutin component abundant in buckwheat helps regulate blood pressure and blood sugar, benefiting vascular health. Buckwheat contains essential amino acids and various vitamins that help prevent obesity. It is rich in potassium, folate, magnesium, and eight essential amino acids, as well as abundant in B vitamins, making it highly nutritious.

 

Fresh and healthy lettuce

Lettuce, a vegetable with a light green color, has a high water content and is rich in folate. Folate is easily destroyed when exposed to heat, so it is best to consume it raw according to the proper preparation methods. It is abundant in iron and essential amino acids, which help purify the blood and promote blood circulation. The alkaloid compound lactucarium has effects such as relieving stress and improving insomnia.

 

Olive oil good for vascular health

We use olive oil, a healthy oil made from unsaturated fatty acids. Unsaturated fatty acids help regulate blood cholesterol levels. The polyphenol components in olive oil eliminate active oxygen in the body, prevent inflammation, and have anti-aging effects.

 

Ingredients & Recipe (per serving)

7 sheets of tofu, 60g of buckwheat noodles, 1/4 cucumber, 2 lettuce leaves, 2 teaspoons of olive oil, 2 teaspoons of sesame oil, 2 teaspoons of soy sauce, a pinch of salt, a little pepper

1. Blanch all 7 sheets of dried seaweed briefly in boiling water, then rinse in cold water and squeeze out the excess water.

Chop the two sheets of seaweed into small pieces.

3. Boil buckwheat noodles in boiling water, rinse with cold water, and drain.

4. Cut the buckwheat noodles into appropriate lengths.

5. Cut lettuce and cucumber into appropriate sizes.

Add chopped fried tofu pieces, lettuce, cucumber, olive oil, soy sauce, perilla oil, pepper, and salt, then season.

Mix the buckwheat noodles evenly by adding them on July 6th.

8. Fill the remaining five tofu pouches with seven small fish to make inari sushi.

      당뇨가 있으신 분들은 
      탄수화물 많이 먹는 것도 무리이니,
      메밀면으로 가끔 먹는 것도 좋을거 같죠
