Fish are broadly categorized into white-fleshed and red-fleshed fish based on their texture. Red-fleshed fish include tuna, mackerel, yellowtail, saury, and anchovies. White-fleshed fish include cod, pollack, flounder, croaker, halibut, and sea bream. Do differences in color affect their nutritional value and health benefits?

 

White and red fish have very different fat contents. .

Red-fleshed fish are oilier, containing 5 to 17 grams of fat per 100 grams. Among commercially available red-fleshed fish, mackerel has the highest fat content, typically reaching 10 grams per 100 grams, depending on size. Instead, most of the fat is omega-3, a polyunsaturated fatty acid that promotes cardiovascular health. White-fleshed fish are relatively low in fat, containing 0.6 to 2 grams per 100 grams. Flounder is on the oilier side of white-fleshed fish, but has only 1.8 grams of fat.


For those on a diet, white fish is more suitable. .

 

Because it's low in fat and calories, it's high in protein, making it a more effective dieting option. Raw white-fleshed sashimi contains only 96-104 kcal per 100g. Fattier red-fleshed fish has 135-240 kcal, nearly double the calories of white-fleshed fish. Protein content is similar in both fish, at 18-20% of total weight.

 

If your goal is to get a balanced diet, red fish is a good choice. Not only is it rich in omega-3s, it also contains a balanced amount of vitamins A, B, C, and E. Taurine, which helps lower blood pressure and cholesterol levels, is also found in red fish.

 

Meanwhile, the two fish pair well with different methods of consumption. Red-fleshed fish can be eaten raw, but it's usually grilled or made into soup. This is because its soft texture and high content of the amino acid histatin cause it to spoil quickly. White-fleshed fish can be grilled, but it's often served raw. This is due to its high collagen content, which gives it a chewy texture.
