Fish are broadly divided into white-flesh fish and red-flesh fish based on their flesh. Red-flesh fish include tuna, mackerel, yellowtail, saury, and anchovy. White-flesh fish are represented by cod, pollock, flatfish, croaker, flounder, and sea bream. Given their different colors, do their nutritional values and health benefits also differ?

 

White fish and red fish have significantly different fat contents.

Red-flesh fish are fattier. The fat content per 100g ranges from 5 to 17g. Among red-flesh fish that are easily available in the market, mackerel has the highest fat content. It varies depending on size, but generally, 10g of fat is present per 100g. However, most of the fat is unsaturated fatty acids, such as omega-3, which are beneficial for vascular health. White-flesh fish have relatively low fat content, with 0.6 to 2g per 100g. Flounder is considered a relatively fatty white-flesh fish, but its fat content is only 1.8g.


For those on a diet, white fish is more suitable.

 

Because it contains less fat and has a low calorie content but high protein content, it allows for more effective dieting. Raw white fish sashimi that has not been separately cooked has a calorie content of only 96 to 104 kcal per 100g. Red fish with a lot of fat has 135 to 240 kcal, which is twice as much as white fish. The protein content in both types of fish is similar, accounting for 18 to 20% of their total weight.

 

If the goal is to consume nutrients in a balanced way, red-flesh fish is good. It is rich not only in omega-3 but also contains a balanced amount of vitamins A, B, C, and E. Taurine, which helps lower blood pressure and blood cholesterol levels, is also much more abundant in red-flesh fish.

 

Meanwhile, the two types of fish have different suitable ways of consumption. Red-flesh fish can be eaten as sashimi, but are usually prepared as grilled dishes or soups. This is because their texture is soft and they are rich in an amino acid called histidine, which causes them to spoil quickly. White-flesh fish are often eaten as sashimi as well as grilled, thanks to their high collagen content, which gives them a chewy texture.
