Green leafy vegetables are rich in various nutrients, including chlorophyll, a plant pigment that converts sunlight into chemical energy (photosynthesis). Common green leafy vegetables include napa cabbage, lettuce, spinach, broccoli, and kale.

 

These green leafy vegetables contain various nutrients such as fiber, vitamins A, C, and K, zinc, folic acid, iron, and potassium, which have beneficial effects on health. First, chlorophyll plays a role in binding to and blocking carcinogens in the digestive tract.

 

Various antioxidants found in green leafy vegetables reduce cell damage and support the immune system. Dietary fiber aids digestion and helps prevent constipation, while potassium regulates blood pressure and helps excrete salt from the body.

In addition, various vitamins help strengthen immunity and bone health. Regarding the benefits of these green leafy vegetables, there is research showing that frequently eating green leafy vegetables reduces the risk of developing type 2 diabetes by up to 14%.

 

Type 2 diabetes refers to acquired diabetes caused by a decline in insulin function due to obesity. A research team at the University of Leicester in the UK investigated six studies involving a total of 220,000 people regarding vegetable intake and diabetes.

 

As a result, it was found that people who ate slightly more than one serving of green leafy vegetables a day had a risk of developing type 2 diabetes that was up to 14% lower than those who ate less than half of the recommended amount.

 

The research team stated that the beneficial components in vegetables must be consumed directly as food to be effective, and that supplements such as antioxidants did not show significant effects. The team also analyzed that the reason the number of deaths from diabetes in 2000 was 2.6 million, which was higher than in previous years, was due to a shortage of fruits and vegetables at the time.
