Green leafy vegetables are rich in various nutrients, including chlorophyll, a plant pigment that performs photosynthesis to convert sunlight into chemical energy. Common green leafy vegetables we eat include cabbage, lettuce, spinach, broccoli, and kale.

 

These green leafy vegetables contain various nutrients such as fiber, vitamins A, C, K, zinc, folate, iron, and potassium, which have beneficial effects on health. First, chlorophyll plays a role in binding and blocking carcinogens in the digestive tract.

 

Various antioxidants found in green leafy vegetables reduce cell damage and support the immune system. Dietary fiber aids digestion and helps prevent constipation, while potassium regulates blood pressure and helps eliminate excess salt from the body.

Here, various vitamins also help strengthen immunity and promote bone health. Regarding the benefits of green leafy vegetables, there is research indicating that frequently consuming green leafy vegetables can reduce the risk of developing type 2 diabetes by up to 14%.

 

Type 2 diabetes refers to acquired diabetes caused by decreased insulin function due to obesity. A research team from the University of Leicester in the UK investigated six studies involving a total of 220,000 people on the relationship between vegetable intake and diabetes.

 

As a result, people who consumed slightly more than one serving of green leafy vegetables per day were found to have up to a 14% lower risk of developing type 2 diabetes compared to those who consumed less than half of the recommended amount.

 

The research team stated that the beneficial components in vegetables need to be directly consumed through food to be effective, and supplements like antioxidants did not show significant effects. The team also analyzed that the reason for the higher number of diabetes-related deaths, totaling 2.6 million in 2000, compared to previous years was due to a lack of fruits and vegetables at that time.
