Eggs can be prepared in a variety of ways. However, for maximum protein absorption, it's best to eat them hard-boiled.

 

◇Protein absorption increases when cooked to perfection.

 

Eating a hard-boiled fried egg helps the body absorb the protein in the egg. While eggs are a representative protein source, they also contain substances that inhibit the action of trypsin. Trypsin is an enzyme that breaks down proteins in the body, and protein digestion and absorption are facilitated when there is sufficient trypsin in the body. When eggs are thoroughly cooked, these substances that inhibit trypsin disappear. A study from Yale University found that 91% of protein is absorbed when cooked, compared to 52% when eaten raw.


◇Can cause biotin deficiency

 

When eggs are eaten raw, the avidin in the egg whites binds to biotin in the intestines, interfering with its absorption. Biotin, also known as vitamin B7, is involved in the production of keratin, the main component of hair. Therefore, severe biotin deficiency can lead to hair loss. Fortunately, heating eggs inactivates avidin. To ensure biotin's absorption, it's best to cook eggs.

Eating raw eggs increases the risk of salmonella infection. Salmonella causes gastrointestinal symptoms such as abdominal pain, diarrhea, and vomiting after an incubation period of 18 to 36 hours. It is destroyed by heating to temperatures above 75 degrees Celsius, so pregnant women, infants, and the elderly, who are vulnerable to infection, should thoroughly cook eggs before eating.

 

Even if eggs are fully cooked, there's a risk of contaminating other foods with salmonella bacteria on your hands during cooking, such as cracking the eggshell. Be careful to avoid cross-contamination. After handling eggs, always wash your hands with hand sanitizer and running water for at least 30 seconds.
