According to the Korea Agro-Fisheries & Food Trade Corporation, the domestic spoonable yogurt market grew by 5% year-on-year, while the offline Greek yogurt market grew by approximately 46%. One of the secrets to its popularity is that one can enjoy new flavor combinations by adding various toppings, such as honey, chocolate, fruit, and granola, to basic yogurt.

A research team at the University of Illinois analyzed the effects of the combination of honey and yogurt. The team grew yogurt cultures, including probiotics, in Petri dishes. They then administered a solution mimicking the composition of saliva, stomach acid, and intestinal bile enzymes to check for bacterial survival. While beneficial bacteria in yogurt aid digestion and promote regular bowel movements, enzymes in the mouth, stomach, and intestines reduce the number of bacteria.
Analysis results showed that when saliva, stomach acid, and intestinal bile enzymes were administered, yogurt containing honey had a higher bacterial survival rate than other yogurts.
The research team asked 66 healthy adults to consume yogurt containing honey and pasteurized yogurt, respectively, for two weeks. The team collected stool samples and information on bowel movements from the participants.
Analysis results showed that yogurt with added honey preserved the most probiotics compared to other yogurts.
Honey is a natural syrup composed of fructose, glucose, maltose, oligosaccharides, sucrose, and the like.
The oligosaccharides in honey serve as an energy source for beneficial bacteria in yogurt. The research team's analysis indicates that Bifidobacterium, a type of beneficial bacteria, modifies the ferulic acid contained in honey to create an environment favorable for survival.
Dr. Hannah Holscher, who led the research, Through the results of this study, we confirmed that adding honey to yogurt helps the survival of beneficial bacteria, such as probiotics. “However, honey is composed of simple sugars, so excessive consumption can increase the risk of weight gain or diseases such as cardiovascular disease, so caution is required,” he said.
To maintain the appropriate intake, you can add about a spoonful of honey to one serving of yogurt.
