Boosting immunity and also effective in cancer prevention
 

Consuming broccoli stems can enhance immune function and prevent various cardiovascular diseases. According to the United States Department of Agriculture (USDA) data, broccoli stems contain 93.2mg of vitamin C, 48mg of potassium, and 20µg of vitamin A per 100g. Vitamin C and vitamin A have antioxidant effects, which are necessary for boosting immunity. Potassium helps regulate blood pressure and reduces the risk of cardiovascular diseases. There are also research findings suggesting that broccoli stems may help prevent stomach cancer. A study presented at the Korean Microbial Biotechnology Society in 2014 indicated that continuous intake of broccoli stems can inhibit the production of nitrosamines, carcinogenic substances produced in the stomach.

Peel the outer skin of the stem and steam it for 5 minutes before eating.
 

When eating broccoli stems, it is better to peel off the outer skin with a knife. This helps to somewhat soften the rough texture of the stem. However, the 2 to 5 cm at the very end of the broccoli stem should be cut off and discarded. The lower part of the stem is very coarse in texture and not suitable for eating. In fact, the closer to the flower cluster, the softer the broccoli stem becomes. Broccoli should be steamed without adding water. This ensures that nutrients are absorbed into the body most effectively. According to a study by the Department of Nutrition at the University of Illinois Urbana-Champaign, steaming broccoli for about 5 minutes maximizes its anticancer effects.

Meanwhile, broccoli is also good for skin health. Broccoli is rich in sulfur compounds and beta-carotene. Sulfur compounds help remove dead skin cells and regulate sebum through their antibacterial effects. People with oily skin or acne scars can see improvement by consistently eating broccoli. Broccoli contains abundant beta-carotene, which is converted into vitamin A in the body. Vitamin A can cause the skin to become rough and reduce skin resistance, making it prone to acne and easily inflamed skin. However, eating large amounts of broccoli all at once can lead to excessive intake of dietary fiber, causing digestive issues such as indigestion. Therefore, it is recommended to consume it regularly rather than in large quantities at once.
