Nutritional components and effective consumption methods of discarded ingredients such as skins, roots, and seeds

Onion skin

Onion skins contain 30 to 40 times more flavonoids, an antioxidant nutrient, than the onion itself. Flavonoids eliminate active oxygen, which causes aging and the buildup of fatigue substances. They also help prevent brain diseases such as senile dementia and Parkinson's disease. To consume onion skins, it is good to add whole onions with skins when making broth. The nutrients are not destroyed, so you can drink the broth, and the texture of the skins improves, making it possible to eat the skins as well.

Sweet pumpkin skin

The skin of the pumpkin contains 'phenolic acids,' which are not found in the flesh. Phenolic acids are powerful antioxidants that help prevent cancer and cardiovascular diseases. When you steam and eat the pumpkin with its skin on, its characteristic tough texture disappears. It is also good to brew it as tea. After peeling and thoroughly washing the skin, dry it for 3 to 4 days, then boil it with water.

Green onion roots

The roots of green onions are rich in a compound called allicin, which helps promote blood circulation. Additionally, they contain twice as many polyphenols as the leaves or stems. In traditional Korean medicine, the root of green onions is called 'Chongbaek' (蔥白), and it is used as an herbal remedy for headaches and high fever caused by colds. It induces sweating to lower body temperature and expels cold energy from within the body. It is good to boil the green onion roots together with radish and pear in water to make tea and drink.

Grape seed

Grape seeds contain resveratrol, which is good for skin regeneration; polyphenols, which inhibit melanin pigment formation; and catechins, which help with blood circulation. It is best to chew and eat the seeds thoroughly, but if it is difficult to eat, you can grind them and use as a pack. They help with skin whitening and wrinkle improvement.

Pumpkin seeds

Pumpkin seeds are rich in minerals. The most notable is zinc, which has a preventive effect on prostate diseases. They also contain calcium and magnesium, which help strengthen bones, nerves, and muscles. Washing pumpkin seeds thoroughly and drying them makes them a good snack for children.
