I was planning to cook each one separately, but to cook quickly, I made a clean and spicy chicken soup that's perfect to eat during these cold days.

Boil the chicken, peel off the skin, remove the fat, and simmer until tender. Then, strain the remaining broth once more through a fine sieve for a refreshing and clean taste.

Chicken skin is firm and juicy, with plenty of vegetables (bean sprouts, king oyster mushrooms, enoki mushrooms, onions, green onions, and radish for a refreshing taste).

The seasoning was made spicy and refreshing by mixing hot chili powder (Vietnamese chili powder) and filled a pot completely.
