Every morning, I microwave a sweet pumpkin until cooked, then scoop out the inside and boil eggs in a pot.
I mash the hollowed-out pumpkin and eggs together to make it easy to eat, then mix in soy milk or milk and thickened fermented Greek yogurt. I add walnuts, almonds, other nuts, and various fruits, preferably seasonal fruits, in small amounts. I eat this as a breakfast. It contains carbohydrates and vegetables from the pumpkin, animal protein from eggs, plant-based protein from nuts, and fresh fruits.
I think the nutrition and taste of a single meal are very good.
