🌻Use the tender inner part of napa cabbage to make fresh kimchi. Add basic seasonings, onion, green onion, sesame oil, and sesame seeds, then enjoy it as a fresh kimchi salad with boiled tofu.
🌻 For the kimchi that you want to store a bit longer, prepare it by salting and draining the water.
🌻 When making delicious fresh kimchi, it's all about the spiciness and sweetness.
I use two types of red pepper powder.
Mix the regular chili powder and Vietnamese chili powder to your liking.
Instead of sugar, when adding sweetness, I usually put in fruit drinks, apples, onions, etc. Since my apples hadn't arrived yet, I used frozen cantaloupe flesh and blended onions.
