I recently tried making braised burdock root myself, and it was much more delicious and healthy than I expected. Burdock root is rich in dietary fiber, which is good for your gut health. It's also high in potassium, which helps with sodium excretion. So, even though it's a savory side dish, I felt comfortable inside.

My method was simple. I thinly sliced ​​burdock root, soaked it in water briefly to remove any bitterness, and then simmered it with soy sauce, oligosaccharide, and sesame oil. A generous sprinkle of sesame salt brought out the rich flavor. Served on a winter table, it pairs perfectly with warm rice, making it a perfect "rice thief."

Burdock also contains antioxidants, which are said to be good for skin health, so I can enjoy both taste and health at the same time.
